Cuisine niçloise
Halfway between opulent Provence and gourmet Liguria (Italian region), the Niçois country has its work cut out for cuisine – it must be simple and inexpensive but of the best quality. Niçois cuisine is one of the most simple, relying on the quality of the food as opposed to heavy sauces and complicated methods to bring out the flavour of the fresh ingredients.
The chefs create delicious, unfussy food at great value, including socca, panisses, nonats, tourtes aux blettes, gnocchis and more (look at our menu for the full list).
Perfect for every-day or special occasions, the combination of simple but exquisite flavours and colours make for delicious meals. The chefs use what is available locally, changing with the seasons. Niçois cuisine stands on its own.
Cheese and dessert are not generally part of Niçois food, but here you will find delicious biscuits and beignets here to round off a pleasant repast.
